Potbelly proves that when the food’s good and the price is right, people will eat up. Offering made-to-order toasted sandwiches for less than 8 bucks, along with salads, shakes, and homemade desserts, Potbelly has been a hit with consumers across the country. The company originated in 1977 as an antique shop that started selling sandwiches on the side; 20 years later, entrepreneur Bryant Keil acquired it and took the neighborhood concept national. Each storefront retains its own warm potbelly personality. We bought in to the winning combination of distinctive-yet-scalable, and have invested in several rounds of the Chicago-based company. It went public in 2013.
